雞蛋的選擇

自從有了BB,好注意食物安全,盡量唔食大陸嘢。因大部份雞都有注射激素同抗生素(外國品牌都喺),可以的話買有機的。

有咗之後雞蛋的吞吐量好強,差不多一日一隻,買有機的蛋一隻平均$6-10,太貴了....

所以,雞蛋的購買便成了學問。

之前食開荷蘭蛋,但近來冇貨,宜家試食韓國蛋,原來質量同安全性都不錯,近日在一田購入的韓國蛋:


韓國雞蛋產業考察情況

  今年三月,孝感綜合試驗站到韓國對韓國的籠具製作廠、雞蛋分級設備公司、養殖農協雞蛋分級包裝物流中心、大韓養雞協會等單位進行了考察交流,現將考察情況作簡要報告。
  首先,養雞業已全部實行集約化養殖,政府對禽防控非常重視。
  在韓國,人們對食品安全認識度較高,推崇健康消費理念。雞蛋作為人們日常食品消費中的必需品,必須保證進入消費者餐桌的雞蛋都是健康安全的。因此,在源頭上對雞蛋安全作要求,傳統養殖已經被市場所淘汰。據大韓養雞協會統計,韓國蛋雞養殖戶約有1465家,蛋雞飼養量約為6072萬隻,平均每個農戶飼養4.1萬隻;今年預計養殖數量比去年增加2.5%;雞蛋的消費量預計將增加2.8%;從這個資料可以看出,韓國蛋雞平均養殖規模較大。
  韓國對於疫情控制主要是進行嚴格管理,採取預防政策,對於低致病禽的防禦基本上不注射疫苗;對高致病禽則會打疫苗。對農場管理方面,國家嚴格規定,外部人員、車輛等必須經過消毒才能進入;在禽高發季節外來人員一律不得進入養殖戶,否則一旦發生疫情,會追加相關人員的責任,政府不給予補貼。201212月份有2家發生高致病禽疫情,20111月—5月期間,發生高致病禽51家;介於我們考察時間為前一年高致病禽高發期,韓國上下進入緊張防禦狀態,國家嚴格規定,所有家禽相關產業暫時停止互動,很遺憾沒能進入養殖現場進行考察。
  韓國的養殖籠具技術非常的先進,我們對韓國京畿道三洋養殖籠具製作廠進行了考察參觀。該廠是專業從事籠具研發和製作的企業;產品種類齊全,有A型籠、梯形籠、立式籠、立式幼雛籠、雞籠、兔子籠、鵪鶉籠、等級系統等;該廠相對中國企業來說雖小,管理體系確是十分健全。且擁有多項設備技術專利。
  第二,農協以雞蛋清洗分級中心為紐帶,為蛋雞會員服務。
  韓國市場上基本沒有未經清潔處理的雞蛋銷售,進入市場的全部都是利用分級機經過清洗的保潔蛋。期間我們考察了大田的愛顧泰科分級設備公司和大田忠南農協雞蛋包裝物流中心,並進行了考察與交流。
  分級設備公司生產的設備產能為27萬枚/時;生產工序為:清洗--乾燥--塗油--紫外線殺菌--分揀--分級--裝盤--噴碼;設備的功能技術與製作精度領先於我國蛋品設備生產企業,其設備廣泛應用於各養殖場與蛋品加工廠。
  農協是農戶組織成立的協會團體,主要維護農戶的利益。全國有1064個分會,主要從事金融銀行、農產品回收和輸出、對農戶進行技術指導三個方面。在金融方面對農戶給予經濟支持,是農戶發展強有力的後盾。農協的雞蛋清洗分級包裝物流中心相當於我國的蛋品加工企業,主要是將農戶生產的雞蛋回收,再進行清洗分級包裝後,運輸到各大賣場銷售。
  第三、韓國的超市不收費用,對農產品加價優惠。
  韓國超市的運營方式和中國超市有所不同,超市不收取任何費用,按購買的金額給供應商付款。他們會主動邀請國內各優秀企業,使其產品進駐超市銷售,特別是品牌產品;而對一些普通產品會進行考察後,決定其是否有資格進入超市銷售。同時對農產品相當優惠,加價率比其它產品相對要低很多,沒有其它任何附加費用,給予農產品很大的保護。在超市,經常會有電視臺在農產品專櫃前做現場直播,向人們介紹當天蔬菜、鮮肉、蛋品行情。使人們不出家們就能瞭解到當天最新農產品情況,一方面便利了消費者,另一方面也引導著人們的消費傾向,宣導品牌消費。在韓國超市,同樣是保潔蛋,品牌雞蛋銷售價格較普通雞蛋價格高出很多,銷售量卻相當好。消費者對品牌相當信賴,品牌效應至關重要。
  第四、大韓養雞協會的作用。
  首先,大韓養雞協會入會率高。在韓全國有蛋雞養殖戶1465家,約有1000家為協會會員,入會率占68%。
  其次,大韓養雞協會承擔著很多工作。主要包括養雞產業的經營和技術指導、養殖產物的流通改善及推進、消費引導宣傳、生產調節和誘導、防疫對策、政策開發及制度改善、提高養殖業者的經濟和社會地位等工作。養雞協會經常參加國際的交流,並進行市場分析,在每月養雞月刊上,對國內外先進設備技術、養殖技術、優秀養殖企業、國際養殖業發展局勢等等做分析和介紹。
  在承擔的各項工作中,尤其在引導消費上對消費者和養殖者的影響較大。
  一方面,通過各種方式向消費者傳達健康蛋消費理念,消費健康蛋是國民健康的保證;另一方面,向養殖戶推廣規模化、標準化養殖,在生產過程中積極主動的在經濟上對養殖戶予以支持,幫助養殖戶實現標準化、集約化飼養方式,提高產量和保證蛋品源頭安全;其次,宣導和支持建立完善雞蛋清洗物流流通體系,確保雞蛋安全流通。
  通過源頭、流通及消費多個環節的引導,從根本上將健康安全消費理念傳達到消費者心中,並且引導人們的品牌意識。讓養殖戶明白健康安全才是蛋品市場的真諦,健康蛋,是市場發展的必然結果;保證了產業體系運作的發展和成熟。
  大韓養雞協會能積極應對國家政策,竭力維護養殖業者的經濟和社會地位。
  近年來中韓經貿往來不斷加強,中國已經成為韓國的最大的交易夥伴,韓國對中國的投資也越來越大,中韓兩國開展自由貿易是現實的發展要求,而今韓國外交商務部和中國已經在開始洽談FTA(中韓自由貿易協定)。自由貿易協定的簽訂對韓國農業有著積極和消極兩個方面的影響。
  韓國國家很小,總面積為100210km2,人口約4887萬名,但和中國有同樣一種現象,農村人口越來越少。韓國農村人口大約有300萬名,占總人口的6%,而85%為60歲以上,養殖業面臨著嚴峻的局面,中國農產品的大量輸出,對韓國養殖業必定帶來較大的衝擊。針對這一國際形勢,大韓養雞協會已經積極就養殖業的發展作長遠的思慮,協會會長積極參與國會議員會議活動,為了順應中韓貿易協定帶來的影響,積極向國會提出開發新政策和改善制度的要求。其根本目的是維護養殖業的利益和發展。
  第五、幾點感受。
  1、韓國蛋雞產業就整體而言,規模袖珍、水準比我國領先一個層級,在養殖、籠具、蛋品加工及協會的管理方面對我國蛋雞產業有較現實的借簽作用。
  2、韓國的雞蛋安全水準較高,已完全沒有農戶傳統散養的模式(有福利養殖模式),市場上流通的全部是經過清洗消毒的保潔蛋,較高的安全水準構築了消費者對雞蛋的依賴。

  3、養雞協會和農協在韓國養雞中發揮著重要作用。韓國養雞協會為農民在政策制訂中爭取話語權。為農民提供產業指導,技術服務和市場宣傳。交流中我們發現他們已為中韓自由貿易協定作了許多研究工作,令對協定草案一無所知的我們深感慚愧。各地農協則以產品加工流通和資金貸款服務為紐帶,為會員提供實實在在的服務。

肯德基原料雞 吃抗生素45天速成

聲稱為內地肯德基、麥當勞提供雞肉的山西粟海集團,被指用大量的工業鹽、氯化膽鹼原料配成飼料餵雞,工人 說,飼料內加入了對人體有害的添加劑。集團回應指給雞吃抗生素,「就像人病了要吃藥一樣,並非不可接受」。肯德基則稱粟海僅佔其雞肉採購量1%左右,將加 強檢驗並根據調查情况作相應處理,麥當勞則稱粟海非其供應商。

中國經濟網報道,山西粟海集團近日向農民推廣養雞致富,聲稱從雛雞到成品雞只需要45天。推廣人員稱,農戶養的雞由公司統一配料、供藥和回收,最後進入麥當勞、肯德基和一些大型超市,一年可以養5、6批,每隻雞可賺2到3元人民幣。

肯德基﹕只佔採購量1%

粟海集團在山西萬榮、平陸等多地都有簽約養殖基地,所有養殖場都由集團提供飼料。據養殖人員稱,飼料有3種,前10天吃一號飼料,是增加營養的;然後吃2號料,是長骨骼的;最後15天吃3號料,是長肉的,一天能長2到3両。

粟海飼料廠佔地10餘畝,離遠就能聞到令人反胃的氣味。車間內有大量的工業鹽、氯化膽鹼原料,工人們不時把粉末狀原料倒入機器中加工。據工人解釋說,「這些飼料配了藥,有添加劑,具體是什麽不知道,但對人體肯定有害,周邊的蒼蠅都毒死了,年輕人都不敢在這裏幹活。」

為保證飼料質量,該公司還有專門的配藥車間。車間內有很多瓶罐貼有各種化學名稱,既有重金屬的硝酸銀,也有滅菌的藥劑。配藥員將藥配好後,交給工人加入不同型號飼料中。
「飼料邊的蒼蠅都毒死了」

簽約養殖農戶稱,按要求,一棚養5000隻雞,密度大很易生病,解決方法就是不斷餵藥,提高雞的抗病能力。因生長周期僅有45天,雞不等發病就被集團運走,流入餐廳。但粟海集團不准養殖戶私自從外面購藥。

對 於雞隻驚人的生長速度,粟海回應稱,與激素無關,而是雞種經過精心選育,把飼料轉化為肉的能力實現了「鳥槍換炮」的飛躍。而工業鹽是軟化水質的,氯化膽鹼 也是國家允許使用的營養性飼料添加劑。至於給雞吃抗生素,「就像人病了要吃藥一樣,並非不可接受。」強調對人體健康的影響小到「可以忽略」。

Top 10: Toxic Ingredients

1. Lead- A neurotoxin that can accumulate in the body over time. Found in lipsticks, hair dyes, hair care, etc. Often listed as lead and lead acetate.
2. Mercury- Known to cause damage to the brain and diminish function. Found in mascaras, etc. Often listed as mercury, thimerosol, mercuric oxide, phenyl mercuric acetate, and phenyl mercuric benzoate.
3. Phthalates- These tiny plasticizers can cause infertility, feminization of baby boys and sperm damage. Found in "fragrance," nail polish, nail treatment, etc. Often listed as phthalate, dibutyl phthalate and diethyl phthalate. These tricky toxins can legally be left out of ingredient list, encompassed under "fragrance." So when buying a product that does not specify fragrance as being naturally derived, I suggest contacting the company.
4. Hydroquinone- This skin bleaching ingredient can cause ochronosis, an irreversible skin condition causing black and black raised bumps on the skin. Found in skin lighteners, anti-agers, hair color/bleach, SPF products, concealer, acne treatments, astringent/toners, etc. Often listed as hydroquinone.
5. Petroleum- Byproducts of this non-renewable, industrial resource still make their way into cosmetic products despite the high-incidence of cancer causing contaminants. Found in facial cleansers, moisturizers, facial treatments, styling products, eye make-up, soap, anti-perspirants, concealer, sunscreens, etc. Often listed as petroleum, petrolatum, petroleum distillates, mineral oil, mineral spirits, unspecified waxes and paraffins.
6. Parabens- These estrogen-mimicers have been found in breast tumors, linked to breast cancer and known tocause hormonal activity in the body. Found in deodorants, lotions, eye shadows, shampoos, facial cleansers, body washes, facial moisturizers, etc. Often listed as methylparaben, ethylparaben, propylparaben, butylparaben, isobutylparaben, (I pretty much avoid anything ending in "paraben").
7. Sodium Lauryl Sulfates- These commonly found chemicals have been shown to cause severe changes to the skin, though studies linking them to cancer are still debatable. Found in toothpastes, shampoos, facial cleansers, body wash, acne treatment, exfoliants, moisturizers, hair color/bleach, etc. Often listed as sodium lauryl sulfate, sodium dodecyl sulfate, sulfuric acid, monodecyl ester and monododecyl ester.
8. Formaldehyde - This awful enbalmer is not just awful smelling, it is also known to cause respiratory irritation as well as cancercancer. Found in nail polish, baby soaps, eye lash adhesives, hair products, sunscreens, etc. Often listed as formaldehyde, formalin, formic aldehyde, Merthaldehyde, methanal, methyl aldehyde, oxomethane, oxymethylene.
9. Coal Tar- A known carcinogen that still makes its way in to beauty products used daily. Found in shampoo, skintreatment, anti-redness creams, bath oils, conditioners, bath salts, bath soaks, etc. Often listed as coal, tar and coal tar solution.
10. Food Allergens- Though little research is currently available on the subject, food allergies and sensitivities can cause rashes, irritation and breakouts. My suggestion is to check all labels for any ingredients that may be of concern to you.

近半護理產品含有害物質

港九藥房總商會的調查發現,巿面上近半個人護理產品含有十一種有害化學成分,長期使用或對身體有害,其中屬於塑化劑的鄰苯二甲酸酯會影響內分泌,可能引致睪丸癌和乳腺癌。有註冊藥劑師呼籲市民購買護理產品時看清楚有關成分,勿盲目相信大牌子。

港九藥房總商會在巿面搜查共三百一十二款產品,根據其包裝標籤資料,發現當中一百五十種產品含有至少一種有害化學成分。調查也作出統計,歸納出十一種最常見的有害化學成分,包括鄰苯二甲酸酯、對羥基苯甲酸酯、硫酸鈉、甲醛等,常見於藥膏、潔膚用品、護膚品和化妝品等。

兒科專科醫生蘇傑榮指皮膚受到上述等化學物質刺激,特別是作防腐劑的對羥基苯甲酸酯,可能會引致接觸性皮膚炎,即俗稱的「主婦手」和「濕疹」等 問題,甚至造成爛面。他指如巿民患上接觸性皮膚炎,只要停用有關含致敏源的產品即可,若情況嚴重可求醫,或使用含類固醇的藥物控制過敏反應。

藥劑師:勿盲目相信大牌子

而鄰苯二甲酸酯屬塑化劑的一種,已被世界衞生組織確定為內分泌干擾素,具有雌性賀爾蒙的作用。蘇傑榮指男童若攝取過多雌激素,有可能會導致陰莖 體積下降,睪丸體積縮小,以及精子數量減少和活力下降和致男性乳房發育症等,甚至不育;而女童若長期使用有關產品,亦可能導致性早熟,甚至增加患上乳腺 癌、子宮內膜異位症和不育等婦女病的風險。

商會在過去兩個月訪問了近五百名市民,發現市民普遍每天吸收一百三十毫升護理產品,但逾八成半人不清楚市面上的護理品有否含上述有害成分,同樣 有近八成半人不清楚這些物質對人體有害。調查亦發現受訪者購買時,近四成人較着重產品品牌,僅一成半人認為安全標籤及產品成分最重要。

商會指停售眾多產品有難度,籲巿民小心選購。註冊及執業藥劑師張德榮也提醒巿民,購買有關產品時要看清楚標籤,確認不含該十一種有害成分才選 購,「勿盲目相信大牌子」。生物及化學專家關志邦指即使產品標榜純天然,亦未必無害,「有些天然物質都可以很毒」,建議勿長期使用單一產品,減低單一有害 物質積聚體內的風險。

My Eco Life (2) : A review of six green laundry detergents

Let’s get down and dirty … about your laundry habits. You may think you’re in the clear, but every time you use your conventional, chemical-filled detergent, you could be affecting your health — as well as the health of waterways downstream.
That doesn’t sound so fresh (and so clean, clean), so I decided to seek out green laundry detergents and find out which one performs best.

While shopping, I kept an eye out for the nasty stuff — the surfactant nonylphenol ethoxylate or NPE, an endocrine disruptor and estrogen mimic; phosphates, which help remove minerals and food bits but cause harmful algal blooms in waterways (these have been phased out by U.S. companies); and bleach, which gets it white, but doesn’t treat your lungs right. The problem is, most detergents don’t so much list ingredients in that sort of detail — and they’re not required by law to disclose their ingredients to consumers even when asked. Instead, they use more vague terms like “surfactant” or “washing soda” or “brightener,” so I found myself looking at their various eco-claims — that is, what they say their products don’t contain.
I also decided to go with detergents “free and clear” of dyes and perfumes, because why bother with possible irritants and allergens if you have the option? A number of the bottles proudly announce that their contents are biodegradable or petroleum-free. According to the Seventh Generation bottle, if every U.S. household replaced one bottle of petroleum-based detergent with a plant-based one, 149,000 barrels of oil could be saved — enough to heat and cool 8,500 homes for a year.

I chose relatively small bottles of detergent as well. Normally, I’m a fan of buying in bulk to save packaging, but I knew I’d be lugging them all home in a backpack, by foot, uphill both ways in the rain. Most of them are also labeled as “concentrated” — an important distinction because, as the Method bottle states, over 400 million gallons of water are used to dilute conventional laundry detergents. The concentrated formulas use less water but still rinse clean — and work in both conventional and high-efficiency machines.
To test the detergents, I planned to do a load of clothes with each. But my clothes don’t usually get very dirty — me working a posh desk job and all — so I wanted to do some elaborate stain experimenting like they do in all the commercials.
This is where I went wrong.
Using cotton T-shirts that were headed to the Goodwill anyway, I applied six-inch stains of ketchup, balsamic vinaigrette, blueberries, and red wine to the front side, and then rubbed the back of each shirt in mud. All without thinking about how detergents on their own aren’t really meant to get out stains that tough, and if I were really doing laundry, I’d use vinegar and club soda and whatever else until I was sure it would wash clean. Instead, all I did was follow the instructions on each bottle for pre-treatment.
Do you know how hard it is to get blueberries out? I’m no Lady Macbeth, but by the end of the trial, I was pretty close to cursing those damned spots and washing my hands of the entire project. That hitch aside, the rest of my clothes came out just fine with each load — so the real differences lie in the eco-claims, the smell, and the bang for your buck.

Actual smell: Soapy, like a bottle of bubbles, but not overpowering.
This bottle is the least exciting looking of all of them, but it has some hefty eco-cred. The laundry list of chemicals it doesn’t contain makes me wonder about what all is in the other detergents I tested. Still, this is a performance review, and with that in mind, I have to comment on the claim that this one “removes the toughest dirt, grease, stains, and odors.” It just didn’t happen. Most of the dirt is gone from the back of the shirt and the ketchup and vinaigrette are hardly visible, but the blueberries and red wine did this one in.

Earth Friendly Products Ultra ECOS Free and Clear All Natural Laundry Detergent

Eco-claims: Phosphate-, formaldehyde-, and petrochemical-free; kind to sensitive skin; neutral pH; plant-based, non-polluting ingredients; septic safe and gray-water safe; 100 percent biodegradable; sodium lauryl sulfate-free and free of non-ionic surfactants derived from SLS; not tested on animals and no animal ingredients.
Ingredients: 100 percent natural anionic coconut kernel oil-based surfactant, soap bark, chamomile, horsetail plant, and purified water.
Stain instructions: Pour some directly onto stained area, rub lightly, and wash as usual.
Actual smell: Slight vinegary scent.
Interestingly, this one says it’s “designed to quickly remove ground-in dirt and stains” — a claim I’d have to question, seeing as how the dirt that I ground in is still very much visible and the blueberry stain still looks good enough to eat. The ketchup and vinaigrette stains are mostly faded, though, so perhaps this one works better on grease.

Method Free + Clear Laundry Detergent

Eco-claims: Contains no perfumes or dyes; phosphate-free; biodegradable; never tested on animals.
Ingredients: Anionic and non-ionic surfactants, enzymes, buffering agents, stabilizer, stain penetrant, brightener, and foam control agents.
Stain instructions: If heavily soiled, add an extra 1/2 oz. of detergent.
Actual smell: Like baby powder and rubber, or the inside of a latex balloon.
The Method-washed shirt still has about half its dirt, maybe all of its red wine, and visible amounts of the ketchup, vinaigrette, and blueberries — though the blueberries are more faded than some detergents left them. This one does come in one of the more stylish bottles, though, which I applaud — but performance is key.

Mountain Green Skin Sensitive Free & Clear All Natural Ultra Laundry Detergent

32 fl. oz./1 oz. per load/32 loads/3X concentrated

Eco-claims: No harsh perfumes, alcohol, dyes, chlorine bleach, petroleum-based ingredients, enzymes, optical brighteners, SLS, or parabens; neutral pH; cruelty-free; readily biodegradable, nontoxic, 100 percent phosphate and phosphorus free; safe for septic systems and for gray-water use.
Ingredients: Purified mountain water, vegetable-based cleaning agents (derived from coconut/palm oil), mild preservatives (food grade).
Stain instructions: Apply directly onto stained area, rub gently, and soak before normal wash.
Actual smell: Like a lemon pie, a slight sugary lemon scent.
All of the stains on this tester are still visible, though a bit fainter. The vinaigrette seems to have given it the most trouble, while the red wine is the most faded. If you can look past the stain-fighting abilities of this one, it does have an impressive list of eco-claims and the scent was by far the sweetest.

I recommend eating your balsamic vinaigrette verrry carefully if you’ll be using this detergent to clean your soiled shirt. This oily stain stands out the most among the faded blueberries, ketchup, and, to a lesser degree, red wine. Half the dirt remains as well.

Ingredients: A low-foaming blend of naturally derived cleaning agents (coconut-derived surfactants, glycerin), natural water softeners, alkalinity builders, anti-redeposition agents (sodium citrate, borax), non-animal derived enzymes to remove protein and starch stains and protect fabrics, plant derived anti-foaming agents (glycerol monooleate, oleic acid), cleaning enhancer (calcium chloride), preservative (less than 0.05 percent), water.
Stain instructions: Sort and pretreat (pour directly on stained fabric and rub gently; allow to soak before washing); use a full cap for heavily soiled loads.
Actual smell: Like Play-Doh.
Of all the detergents, this is the only one that claims to disclose all of its ingredients and appears to do so — even if that means listing chemicals we can’t pronounce. It also does a great job of explaining what that all means. In terms of the stains, the dirt is only visible upon close examination and the ketchup is gone. The remaining vinaigrette, blueberries, and red wine are pretty well faded — this detergent was the best at removing most of all of the stains.

Stain instructions: Rub a small amount directly into the stain before washing.
Actual smell: Virtually odorless, faint scent of clay
I added this detergent into the mix after all the rest of my trials came back with stains. I wanted to make sure my experiment wasn’t just taking the eco-brands to the cleaners. This one still couldn’t make a clean sweep of it, though. The dirt and ketchup are gone, and the red wine is mostly faded, but the vinaigrette and the blueberries are still causing trouble.
The bottom line: It’s a wash — none of the detergents fully removed all of the stains, but they all produced otherwise-clean clothes. And though all claimed to be free of perfumes, each had a singular scent. For maximum eco-claim and stain removal with the lowest price and least-perfumy scent, we suggest Seventh Generation Free & Clear.

原來青檸咁有益!

青檸具有強鹼性,被認為是治療疾病的良藥。止咳、化痰、生津健脾,且對於人體的血液循環及鈣質吸收均能起到促進作用。含有豐富的維生素C,不但能預防癌症、食物中毒,還能降低膽固醇,消除疲勞,增加免疫力。並且能克服糖尿病、高血壓、貧血、感冒、骨質疏鬆症。

中醫認為,檸檬性溫、味苦、無毒,具有止渴生津、祛暑清熱、安胎、疏滯、化痰、止咳、健胃、健脾、止痛、殺菌等功能。吃青檸果或喝青檸汁,可以化食、解酒,排毒。

增強腦力:據醫學報告顯示,由於血液循環功能退化,造成腦部血液循環受阻,妨礙腦部細胞的正常工作,造成記憶力退化。而檸檬含有抗氧化功效的水溶性維生素C,能有效改善血液循環不佳的問題。因此每天食用青檸有助於強化記憶力、提高思考反應的靈活度。

消除疲勞和腳部酸痛:肌肉酸痛方面,檸檬亦有幫助,只有用一塊青檸在酸痛部位輕擦,即有舒緩疲勞功效。若腳部酸痛,把一個青檸榨汁混入一盆熱水,用來浸腳,效果奇佳。 

增強抵抗力:它含有的大量維生素C和檸檬酸,可幫助消化,促進造血功能,提高機體抵抗力,加速創傷恢復。

殺菌:青檸含有菸酸和豐富的有機酸,其味極酸。檸檬酸汁有很強的殺菌作用。實驗顯示,酸度極強的檸檬汁,在15分鐘內可把海生貝殼內所有的細菌殺死。

促進消化:青檸還能促進胃中蛋白分解酶的分泌,增加胃腸蠕動。日常生活中可代醋使用,製作冷盤涼菜及醃食等。

抗炎:青檸中所含的橙皮甙和柚皮甙具有抗炎作用。而青檸果皮中的香葉木甙腹腔注射,對角叉菜膠所致的大鼠足蹠水腫有消炎作用。

防治心血管疾病、降血糖:檸檬酸與鈣離子結合則成可溶性絡合物,能緩解鈣離子促使血液凝固的作用,可預防​​和治療高血壓和心肌梗塞。檸檬酸有收縮、增固毛細血管,降低通透性,提高凝血功能及血小板數量的作用,可縮短凝血時間和出血時間31%~71%,具有止血作用。

青檸表皮含有的維生素P,可防止人體血管硬化的發展,對改善高血壓和心肌梗塞症狀緩解病情非常有益。方法很簡單,取1枚檸檬和10枚荸薺放在一起用水煎煮。青檸檬可降血壓降膽固醇、改善心血管病。它和柚子一樣,含有一種近似胰島素的成分,能降血糖。

治療風熱感冒:青檸富中的維他命C,具確有抗菌作用、免疫效果、協助骨膠原生成等多種功效,平時亦可多喝熱檸檬水,來保養身體,補充維他命C。感冒時一天喝上500至1000cc,可以減輕流鼻涕,感冒散得也快,尤其是剛感冒時,甚至可因此不藥而愈。除了抗菌及提升免疫力,還有開胃消食、生津止渴及解暑的功效,所以用在風熱或挾暑的感冒較合適。

防治腎結石:檸檬汁中含有大量檸檬酸鹽,其中檸檬酸鉀鹽能夠抑制鈣鹽結晶,從而阻止腎結石形成,甚至已成之結石也可被溶解掉。所以食用檸檬能防治腎結石,使部分慢性腎結石患者的結石減少、變小。

袪痰:青檸能袪痰,且袪痰功效比橙和柑還要強。將青檸汁加暖水和鹽,飲之可將喉嚨積聚的濃痰順利咳出,十分靈驗。感冒初起時,不妨用青檸加蜜糖沖水飲,可以紓緩喉痛、減少喉嚨乾涸不適。  

補鈣:檸檬皮還有豐富的鈣質,所以為了達到理想的效果,最好還是連皮榨汁最有營養。  
治療風濕病:青檸汁對風濕病也有很好的療效。  

防止壞血病:青檸所含的大量維生素C,是防止壞血病的妙藥。 18世紀,英國海員中曾經出現因缺乏維生素C而引起的壞血病,先後死亡了大約1萬人。醫藥科研部門經過研究實驗,才發現檸檬中的維生素C能夠治療壞血病,海員只要攝入一定數量的檸檬汁,就不會患壞血病了。從此,英國有關部門規定,海員每天喝1杯檸檬汁,不備足檸檬的船不准啟航。  

預防艾滋病:青檸汁可能將成為全球的科學家苦心尋找的艾滋病殺手。墨爾本大學皇家女子醫院婦產科教授羅傑肖特在研究中發現,檸檬汁能夠殺死試管中的艾滋病毒,這為女性預防艾滋病感染帶來了希望。 “假如臨床試驗證明​​檸檬汁在陰道內是適合的,安全的和有效的,那麼它將可能成為一種自然的殺菌劑。”在實驗室的測試中,肖特發現濃度10%的檸檬溶液使艾滋病毒的複制減少了三分之二,而20%的溶液就會有90%的病毒被殺死,再大濃度的溶液就表現出了有毒的徵兆。儘管這是一個非常有前途的試驗結果,但研究的進一步深入仍然有相當的難度。

懷孕止吐:懷孕婦女可放置一些青檸在床邊,早上起來嗅一嗅,有消除晨吐的效用。

婦科疾病:有研究指出,檸檬有改善子宮前傾、子宮韌帶鬆垂甚至閉經的療效。
